Italian Chicken Cacciatore

Also called "chicken hunter's style": famous in Italian restaurants all over the world and here in its original Milanese form

1) Wash and pat dry the chicken

2) Cut into small pieces

3) Heat a pan with oil and cook the chicken pieces for about 10 minutes

4) Add to it the diced onion, carrot, celery, the rosemary, salt and pepper

5) Allow to cook for about 15 minutes

6) Add the chicken wine, once the wine is cooked off add in the tomatoes

7) Cover the pan with a lid and allow to simmer for about ½ hour

8) Add a little water if the broth looks dry

9) Add the minced parsley


10)Serve the chicken with some white rice or pasta
