Chicken Piccata

Chicken breast halves 6 , skinned and boned
All purpose flour 1/3 Cup (5.33 tbs)
Salt 1 1/2 Teaspoon
Pepper 1/4 Teaspoon
Butter/Margarine 1/4 Cup (4 tbs)
Lemon juice 1/4 Cup (4 tbs)
Lemon 1 , cut into thin slices
Chopped fresh parsley 2 Tablespoon



1. In between 2 sheets of waxed paper place the chicken pieces.

2. Flatten these into 1/4 inches thickness using a rolling pin or a meat mallet.

3. Mix salt, pepper and flour. Dredge the chicken pieces in this flour mixture.

4. In a large skillet add butter and melt it on medium heat.

5. Cook for 3-4 minutes on each side till the chicken turns golden brown in color.

6. Remove the chicken from heat and drain the excess oil in paper towels. Let chicken be warm.

7. In the skillet add the pan drippings, lemon slices and lemon juice. Cook to heat well.

8. Pour this cooked lemon mixture on the chicken. Sprinkle chopped parsley.


9. Serve Chicken Piccata with parsley sprigs garnish.
