Peasant Minestrone Soup

Ingredients

Garlic 10 Clove (50 gm) , chopped
Red onion 1 , diced
Dried white beans 1 Cup (16 tbs)
Carrots 4 , halved lengthwise, sliced
Celery ribs 2 , sliced
Water/Vegetable stock 6 Cup (96 tbs)
Tomato puree 2 Cup (32 tbs)
Diced tomato 1 Cup (16 tbs)
Pitted green olives 1 , halved
Bay leaf 1
Basil 1 Teaspoon
Oregano 1 Teaspoon
Cayenne pepper 1/2 Teaspoon
Noodles/Other pasta 8 Ounce
Spinach/Swiss chard 1/2 Pound , coarsely chopped

Directions

MAKING

1.Pick a soup kettle.Add garlic, onion, beans, carrots, celery and water and let it come to a boil

2. Cover pot, lower heat and let it simmer for 1 1/2 hours till beans are tender.

3. Add the pasta,tomatoes and the tomato puree,olives,bay leaf,oregano,basil and cayenne pepper

4.Cover and let it simmer for a further 15 minutes

5. Toss in the the green leafy vegetable and let it stand for a few minutes. Adjust seasoning, if needed

SERVING

6.Serve hot with chunky bread
