Minestrone With Fresh Herbs

Ingredients

Olive oil 1/4 Cup (4 tbs)
Butter stick 1/2
Onion 1 Large , coarsely chopped
Fresh parsley 1 Bunch (100 gm) , minced
Garlic cloves 5 , minced
Chicken broth 3 Cup (48 tbs)
Water 2 Cup (32 tbs)
Dried pinto beans/Northern beans 3/4 Cup (12 tbs)
Fresh green beans 1 Cup (16 tbs)
Celery stalks 3 , diced
Carrots 3 , diced
Cabbage head 1/3 , chopped
Zucchini 2 Medium , diced
Tomato paste 2 Teaspoon
Pasta 1 Cup (16 tbs)
Salt To Taste
Pepper To Taste
Freshly grated nutmeg 1/4 Teaspoon
Fresh basil leaves/Basil 1/2 teaspoon, if dried
Grated parmesan cheese To Taste (As Garnish)

Directions

MAKING

1)Take a large size pot,add the butter and oil to melt and mix over a medium flame.

2)Now toss in onions and parsley and cook for upto 5 minutes.

3)At this point,add garlic and simmer till the onion is translucent.

4)Now pour the broth,water,dry beans and tomato paste.

5)Now boil this mixutre for 20 minutes.

6)Toss in the green beans,celery and the carrots and cook for a further 10 minutes.

7)The zucchini can be added at this stage and cook for 30 minutes.

8)Add the salt,pepper,nutmeg,basil and the pasta now.

9)Now stir and continue to cook for 1 1/2 hours.

SERVING

10)Garnish with freshly grated parmesan and serve hot.
