Cranberry Bean Minestrone

Ingredients

Meaty beef shank 1 1/2 Pound (About 3 Slices)
Carrots 1 , cut up
Onion 1 , cut up
Celery stalk 1 , cut up
Salt 2 Teaspoon
Pepper 1/4 Teaspoon
Water 3 1/2 Quart
Tomatoes 2 Large , peeled and quartered
New potatoes 3 Small , peeled and sliced
Shelled cranberry beans 1 1/4 Pound (2 Cups)
Pasta stars/Other small macaroni 1/4 Cup (4 tbs)
Italian green beans 12 , cut in 1 inch pieces
Zucchini 2 Medium , sliced
Whites of leeks 2 , sliced
Shelled peas 1 1/2 Cup (24 tbs) (About 2 Pounds Peas In Pod)
Sugar 2 Teaspoon
Basil leaves 1/2 Teaspoon

Directions

MAKING

1. In a large soup pot add beef shanks, carrot, onion, celery, salt, pepper, and water.

2. Boil the mixture and simmer for 2 1/2 hours.

3. Cool slightly and strain the stock.

4. Scrape meat from bones and cut in bite-sized pieces.

5. Discard bones and vegetables.

6. To the strained broth add tomatoes, potatoes, cranberry beans, and pasta. Simmer for 20 minutes.

7. Mix Italian green beans, zucchini, leeks, peas, sugar, basil, and reserved meat.

8. Simmer for 10 minutes longer.

SERVING

9. Serve in a large soup pot and pass the cheese in a bowl.
