Chicken Cacciatore With Bacon

Bacon slices 4 , cut in small pieces
Chopped onions 1/3 Cup (5.33 tbs)
Garlic 1 Clove (5 gm) , minced
Canned mushrooms 4 Ounce , sliced (1/2 Cup)
Spaghetti sauce 4 Cup (64 tbs)
Salt 1 Teaspoon
Oregano 1 Teaspoon
Pepper 1/4 Teaspoon
Chicken 3 Pound , cut
Vegetable oil 1/2 Cup (8 tbs)



1. In a large saucepan, fry the bacon on high heat until brown.

2. Add onion and garlic and sauté until soft.

3. Add mushrooms and sauté with onion and garlic until soft and golden.

4. Blend in spaghetti sauce and season with salt, oregano and pepper.

5. Reduce heat and simmer the sauce for about 10 minutes, stirring occasionally.

6. In the meantime, take another large skillet and heat the vegetable oil in it.

7. When hot, add the chicken pieced and fry them until evenly browned on all sides.

8. Spoon out excess oil.

9. Pour the sauce over the chicken and bring to a boil.

10. Reduce heat and cover the pan.

11. Simmer the chicken for about 45 minutes, stirring occasionally, until the chicken is tender and the sauce has reduced to a thick glaze.


12. Serve the Chicken Cacciatore accompanied by a nice green leafy vegetable or a salad dressed with lemon and oil vinaigrette and a pasta or polenta cakes if you like.
