Classic Bolognese Sauce

Bacon 3 slices
Chicken Livers 1/2 pound
Onions 2 medium, chopped
Carrot 1 medium, chopped
Celery 1 stalk, chopped
Extra Lean Ground Beef or Veal
Tomato Paste 1 6
Dry White Wine 1 1/2 cups
Beef Stock or Bouillon 1 1/2 cups
Oregano 1 teaspoon
Nutmeg 1/2 teaspoon
Black Pepper 1/2 teaspoon, freshly ground
Salt to taste



1) In a non-stick pan, brown the bacon and remove.

2) In the same pan, lightly brown the chicken livers in bacon fat.

3) Take the liver out of the pan.

4) Chop the liver and bacon.


5) In a slow cooker, place the chopped bacon and liver.

6) In the same pan, saute together onions, carrot, and celery for 3 minutes, until soft.

7) Add the onion mixture to the chopped meat, in the slow cooker.

8) In the pan, brown beef.

9) Pour of the fat and place the beef in slow cooker.

10) Stir the tomato paste, wine, stock or bouillon, oregano, nutmeg, and seasoning, to slow cooker.

11) Put the lid on and simmer for 3 to 4 hours to blend the flavours.


12) Serve hot over desired pasta and garnish with grated Parmesan cheese if desired.
