I love the Summertime because that means fresh, juicy peaches. I always try and find a way to use them whether in a dessert, cocktail, and now as an appetizer. This easy to make bruschetta will impress everyone.
|Baguette||1 , sliced into 1 inch slices and toasted|
|Peaches||2 , sliced|
|Ricotta||1 Cup (16 tbs)|
|Zest of lemon||1|
|Salt and pepper||To Taste|
|Honey||2 Tablespoon , divided|
|Toasted walnuts||1/4 Cup (4 tbs)|
Heat a grill pan over medium high heat.
Place the peaches in an even layer and let cook until they get beautiful grill marks. Flip them over and cook on the other side.
Meanwhile, in a bowl, mix together the ricotta, salt, pepper and lemon zest.
Evenly spread the ricotta on all of the toasted baguette slices.
Place the peaches over the baguette slices, drizzle with honey, and sprinkle with the toasted walnuts.
Serve hot with some soft drink.
If you don't have a grill pan or grill just use a skillet.
