Mixed Vegetable Frittata

Mixed Vegetable Frittata is wonderful dish suitable for lunch or dinner. Pumpkin, potato and zucchini are combined with eggs, milk and basil. Baked until golden and set, this delicious meal can be served hot or cold, and the left overs can be frozen for another day - give it a go!


Pumpkin 400 Gram , peeled, diced, cooked until tender
Potato 400 Gram , peeled, diced, cooked until tender
Zucchini 1
Eggs 8
Milk 1/3 Cup (5.33 tbs)
Chopped basil 2 Tablespoon
Grated cheddar cheese 1/2 Cup (8 tbs)
Salt To Taste
Pepper To Taste
Cooking spray 1



Preheat oven to 375°F/ 190°C.

Grease baking dish with cooking spray.



In a large bowl, combine pumpkin, potato, zucchini and mix well.

Transfer the vegetables to baking dish and set aside.

In a large bowl, combine eggs, milk, salt, pepper and whisk well.

Pour over vegetables and sprinkle basil and cheese over it.

Pop into oven and bake for 20 minutes or until set.

Once done, allow to cool for 5 minutes.



Serve and enjoy!
