A can or two of Tuna is always in the pantry and this easy and quick recipe for a light summertime meal or a delicious light lunch will become a family favorite.
Ripe tomatoes | 6 Large , pureed | |
Olive oil | 1 Tablespoon (use as needed) | |
Butter | 1 Tablespoon | |
White onion | 1 Large , diced | |
Dried basil | 1 Teaspoon | |
Dried oregano | 1 Teaspoon | |
Ground garlic | 2 Teaspoon , divided | |
Chicken stock/Vegetable stock | 1/2 Cup (8 tbs) | |
Parmesan cheese | 1/2 Cup (8 tbs) | |
Chopped parsley | 1 Tablespoon | |
Penne pasta | 1 Pound | |
Cherry tomatoes | 1 Cup (16 tbs) | |
Smoked tuna | 12 Ounce |
Making
Sauté onion and garlic in butter and olive oil. Wilt onion and garlic, but do not brown.
Add the basil and oregano to get the flavors going.
Add the tomato puree.
Sauté covered until oil splits.
Cook pasta according to package directions, drain.
Add the pasta.
Add Parmesan cheese with the tuna and liquid stock. Add pasta cooking water to help sauce stick.
Serving
Season and add parsley and cherry tomatoes before serving.
In a separate hot pan, sauté garlic and cherry tomatoes until tender.
