Bolognese Rice Bake is a delicious main meal that is perfect for throwing together on busy weeknights. Beef and vegetables are combined with rice and eggs. Sprinkled with cheese and baked until golden, this filling dinner is ideal for feeding a crowd - give it a go!
|Beef mince||500 Gram|
|Brown onion||1 , finely chopped|
|Carrot||1 Large , finely chopped|
|Olive oil||2 Tablespoon|
|Garlic||2 Clove (10 gm) , minced|
|Worcestershire sauce||2 Tablespoon|
|Tomato paste||1/4 Cup (4 tbs)|
|Canned diced tomatoes||400 Gram (1 can)|
|Beef stock||1 Cup (16 tbs)|
|Cooked long grain white rice||2 Cup (32 tbs)|
|Grated cheddar cheese||2 Cup (32 tbs)|
|Freshly chopped parsley||2 Tablespoon (plus extra to garnish)|
|Eggs||4 , beaten|
Preheat oven to 350°F/180°C.
In a pan, heat oil and sauté onions and carrots in it. Cook until softened.
Add garlic, beef mince and stir well. Cook for 5-10 minutes or until browned.
Add salt, pepper, worcestershire sauce, tomato paste, diced tomatoes, beef stock and stir well.
Reduce temperature and allow to simmer for 20 minutes. Turn off heat and set aside.
In a mixing bowl, combine cooked rice, parsley, cheddar cheese, eggs and mix well.
Add Bolognese sauce and mix well.
Transfer the mixture to baking dish and top with cheese and parsley.
Pop into oven and bake for 30 minutes or until golden brown.
Allow to cool before serving.
