Caesar Salad with Homemade Croutons

Romaine and leaf lettuce mix 2 , chopped in 1 inch pieces
For croutons
Sea salt 1 Tablespoon
French loaf 1 , cut into 1 inch pieces
Melted butter 1/4 Cup (4 tbs)
Olive oil 1/4 Cup (4 tbs)
Garlic 3 Clove (15 gm) , minced
Freshly ground black pepper 1 Tablespoon
For dressing
Egg yolk 3
Extra virgin olive oil 1/3 Cup (5.33 tbs)
Garlic 3 Clove (15 gm) , minced
Balsamic vinegar 1 Teaspoon
Lemon juice 1 Tablespoon
Mustard 2 Teaspoon
Salt and cracked black pepper To Taste
Grated parmesan 1/3 Cup (5.33 tbs)



1. Preheat the oven to 400 F.


2. Mix olive oil with butter and garlic.

3. Add most of the freshly ground pepper and most of the salt as well. Mix.

4. Drizzle with this olive oil, butter mix all over the croutons.

5. Spread the croutons on the tray. Pop it in the oven for 10 minutes.

6. Meanwhile take extra virgin olive oil and egg yolks in a big bowl. Beat until well incorporated.

7. Add the garlic paste, continue to whisk.

8. Drop in the balsamic vinegar and lemon juice and continue to whisk until everything is well incorporated.

9. Add in mustard and continue to whisk.

10. Season with salt and pepper and whisk again.

11. Finally add the cheese and whisk more to prepare the dressing.

12. When the croutons are done, give a final seasoning and let it cool.

13. Place the chopped lettuce in a bowl and add the croutons on top.

14. Drizzle dressing on top of the lettuce. Mix gently.


15. Transfer to a serving dish, garnish with grated cheese. Serve as it is and enjoy.
