Pasta shells are a fun option on pasta night, and a clever way to sneak in those good-for-you veggies in case you have a picky eater.
Take these pasta shells to work or school and you will sure love it!
Pasta shells | 6 , boiled (5 | |
Oil | 1 Tablespoon | |
Finely chopped onion | 1/2 Cup (8 tbs) | |
Minced garlic | 1 Teaspoon | |
Chopped spinach | 2 Cup (32 tbs) | |
Salt and pepper | To Taste | |
Italian seasoning | 1/2 Teaspoon (Optional) | |
Cottage cheese | 1 Cup (16 tbs) | |
Pasta sauce | 3/4 Cup (12 tbs) |
MAKING
In a pan, heat oil and add in the onion. Cook until edges are brown.
Add garlic and cook for a few minutes and stir in spinach.
Season with salt and pepper and Italian seasoning. Quickly stir and add in cottage cheese. Cook until all the liquid is absorbed.
Turn of the stove and let it cool.
Stuff the shells with 1½ tablespoons of the mixture.
SERVING
Drizzle some sauce over the pasta and serve.
