This simple tasty one pot meal will surely be a hit with your family.
Italian sausage | 500 Gram (1 pound) | |
Extra virgin olive oil | 2 Tablespoon | |
Bell pepper | 3 , thinly sliced (assorted) | |
Fennel bulb | 1 , trimmed and sliced | |
Onion | 1 Large , sliced | |
Coarse salt | To Taste | |
Garlic cloves | 3 , mince | |
Chopped fresh rosemary | 1 Teaspoon | |
Red pepper flakes | 1/2 Teaspoon | |
Fennel seeds | 1/2 Teaspoon (Optional) | |
Canned diced tomato | 15 Ounce (fire roasted) | |
Red wine | 1/2 Cup (8 tbs) |
GETTING READY
1. Preheat the broiler.
MAKING
2. Poke holes in the sausages and lay them on a baking sheet.
3. Pop the baking sheet in broiler and broil sausages for about 8 minutes or until golden brown, turning once halfway through.
4. Remove from broiler and cut them in half.
5. Meanwhile, in a large skillet, heat olive oil over medium-high flame, toss in the bell peppers, fennel and onion. Stir and cook for about 3 minutes or until slightly softened.
6. Add salt, garlic, rosemary, red pepper flakes and fennel seeds. Stir and cook for 1 minute.
7. Pour red wine and add tomatoes. Stir well, reduce heat to medium, cover and cook for about 5 minutes or until the vegetables are tender.
8. Uncover add the sausages and cook for another 3-4 minutes.
