Healthy Cooking Episode 17: Portobello Pizza

Ingredients

Portobello mushrooms 2 Large
Chopped red onion/Chopped white onion 1/2 Cup (8 tbs)
Asparagus spears 2 , sliced (4
Garlic 2 Clove (10 gm) , finely chopped
Chopped spinach 2 Cup (32 tbs) (1
Roma tomato 1 , finely chopped
Turkey pepperoni 1/4 Cup (4 tbs) (Optional)
Parmesan cheese 2 Tablespoon (OR DESIRED CHEESE)
Pizza sauce 3 Tablespoon (no canned sauce)
Garlic powder 1 Tablespoon
Italian seasoning 1 Tablespoon
Red pepper flakes 1 Tablespoon (Optional)

Directions

GETTING READY

Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil and set aside.

MAKING

In a large bowl, add in the red onion, asparagus spears, garlic, spinach, Roma tomato, Parmesan, pizza sauce, garlic powder, Italian seasoning and red pepper flakes. Toss well.

Place the mushrooms over the prepared baking sheet and top with the veggie mixtures. Lay down the turkey pepperoni and bake for 30 – 40 minutes.

SERVING

Serve the pizza with some green salad.
