Nutmeg | To Taste (a few pinches) | |
3 cheese blend | 1 Cup (16 tbs) , shredded (Romano, Parmesan and Asiago) | |

MAKING
In a pan, put on medium-low heat add butter and cream. To the mixture add freshly ground pepper and nutmeg.
As the mixture bubbles up add the shredded cheese. Once the cheese melts completely add the yolk of an egg.
Stir the sauce continuously so that the egg does not get scrambled.
SERVING
Add the sauce to your favorite pasta recipe and enjoy!
