Sicilian Stuffed Rice Balls with Goat Cheese Arancini

Take a trip to Sicily with me as we enjoy an authentic Italian classic from the south of Italy, Sicilian Fried Rice Balls or Arancini. Today is a special recipe as I make them with risotto and stuff with grilled pancetta and prosciutto, mozzarella, and goat cheese.


Risotto 6 Cup (96 tbs)
Eggs 4
For filling
Pancetta 1/2 Pound , grilled and cooked
Prosciutto 1/2 Pound , grilled
Mozzarella 1/2 Cup (8 tbs)
Goat cheese 1/2 Cup (8 tbs)
For egg wash
Eggs 4
Whole milk 1 Cup (16 tbs)
Other ingredients
Flour 1 1/2 Cup (24 tbs)
Breadcrumbs 1 1/2 Cup (24 tbs)
Olive oil 3 Cup (48 tbs) (For deep frying)



1. Line a tray with a parchment paper and set it aside.

2. Mix panchetta with proscuitto and keep it aside.

3. Prepare egg wash by beating eggs with milk. Set it aside.


4. Beat eggs and mix it with the risotto very well.

5. Take some risotto with an ice cream scoop and place it on slightly wet hands, roll it in a rice ball.

6. Make a hole in the center of the rice ball and stuff 1/2 teaspoon of pachetta proscuitto mix, 1/2 teaspoon of mozzarella and 1/2 teaspoon of goat cheese.

7. Push the filling inside the rice ball and bring the edges together to make a ball. Repeat the same to make all the rice balls. Set them all on the parchment paper lined tray.

8. Roll the stuffed rice balls in a bowl of flour.

9. Dip them in egg wash and then roll them in breadcrumbs.

10. Place it back on the tray. Repeat the same to bread all the rice balls.

11. Heat olive oil to 350 F.

12. Deep fry the breaded rice balls until golden brown.

13. Remove the fried rice balls on a wire mesh and let them cool down a bit.


14. Place the rice balls on a serving dish. Pour some sauce on the sides. Garnish with mozzarella and parsley. Enjoy!
