Broccoli and Basil Rice

With unmistakable shades of Italian cooking, the Broccoli and Basil Rice is a comforting rice preparation with crunchy veggies and creamy zucchini topped with herbs and chilli flakes, and garnished with grated cheese. Easy and quick to prepare, you can serve this dish without much ado as it demands no elaborate accompaniment. Just a choice of sauces and maybe a dash of pepper is all it calls for!


Melted butter 1 Tablespoon
Finely chopped garlic 1 Tablespoon
Diagonally cut and blanched baby corn 1/4 Cup (4 tbs)
Blanched broccoli florets 1/2 Cup (8 tbs)
Blanched zucchini cubes 1/4 Cup (4 tbs) , unpeeled
Capsicum cubes 1/2 Cup (8 tbs) (red, yellow and green)
Cooked long grain rice 3 1/2 Cup (56 tbs)
Dry red chili flakes 2 Teaspoon
Salt To Taste
Milk 2 Tablespoon (or use cream)
Finely chopped basil 1/4 Cup (4 tbs)
For garnish
Grated processed cheese 1 Tablespoon



1. In a non-stick pan, heat butter, add garlic and sauté over medium flame for a few seconds.

2. Add baby corn, broccoli, zucchini and capsicum. Stir and cook for 2 minutes.

3. Add rice, chili flakes, salt, milk and basil. Stir occasionally and cook for 2 minute.



4. Garnish with cheese and serve hot!



You can also use mushroom instead of broccoli.
