This classic Italian meat sauce is married with baked ziti to create a delicious one pan meal which is similar to but easier than lasagna. You begin with mire poix composed of celery, carrots and onions so the vegetables are in there. Adding tomato, meat, cheese and pasta completes all the food groups. Preheat oven and keep it ready.
In a saucepan, heat olive oil and sauté chopped garlic in it. Add chopped carrots, celery, onions and stir well. Cover with lid, add salt and chopped pancetta. Cook until onions turns transparent.
Add ground meat and stir well.
Add crushed red pepper, sea salt, freshly ground pepper, cover with lid and cook for few minutes.
Add wine, tomato paste, fresh basil and stir for the ingredients to blend well. Cover with lid and cook for 10-15 minutes.
Once done, spread the sauce and ricotta cheese over fresh pasta in baking dish. Layer mozzarella cheese on the top and sprinkle grated romano cheese.
Pop into oven and bake for 10-15 minutes.
