Veal Marsala With Mushrooms, Onions Over Pasta

My veal marsala is so full of great flavor, you will love it. It's the sauce that makes this dish.


Veal scallopini 1 Pound (4 slices)
Yellow onion 1 , finely chopped
Unsalted butter 2 Tablespoon , divided
Rosemary stems 1
Italian parsley 1/4 Cup (4 tbs) , finely chopped
Cremini mushrooms 1 1/2 Cup (24 tbs) , washed, sliced
Olive oil 2 Tablespoon , divided
Sweet marsala wine 3/4 Cup (12 tbs)
Low sodium chicken broth 1 1/2 Cup (24 tbs)
Garlic 2 Clove (10 gm) , minced
Fresh lemon juice 1 Teaspoon
Heavy whipping cream 1 1/2 Tablespoon
Kosher salt To Taste , divided
Pepper To Taste , divided
Parmesan cheese 50 Gram , grated



In a wide bottom pan, heat 1 1/2 Tbsp. of olive oil and 1 Tbsp. butter over medium high heat. Season the veal with salt and pepper and cook for 1 minute. Flip and season the other side with salt and pepper and again cook for a minute.

Take out the veal and place in an oven proof dish and place in a 200 degree F. oven that has been turned off.

Add in the remaining oil and butter to the pan, followed by the onion and sauté for 4 to 5 minutes until the onion is soft and translucent.

Stir in the garlic and sauté for 1 minute more, followed by the mushrooms. Season with salt and cook for 8 or 9 minutes until the mushrooms release their liquid and become soft.

Pour in the wine to deglaze the pan and cook for 3 to 4 minutes.

Add in the chicken broth and season with rosemary and stir. Bring to a boil and reduce the heat to simmer until the sauce has reduced by half for 9 to 10 min.

Season with lemon juice and parsley and stir. Add the veal back to the pan to reheat the veal for 1 to 2 minutes.

Turn off the heat and then drizzle the heavy cream in the pan and stir to combine.


Serve the veal over your favorite pasta noodles and top with freshly grated Parmesan cheese.
