Porchetta From the Monolith - English Grill and BBQ

A classic italian pork stuffed roast. Try this delicious yet simple recipe and you will cook it again and again.


Pork roast 4 Pound
For seasoning
Fennel seeds 3 Tablespoon , roasted
Fresh oregano 2 Tablespoon
Kosher salt 2 Pinch
For stuffing
Roasted pine nuts 3 Tablespoon
Chopped onion 2 Tablespoon
Fresh oregano leaves 1 1/2 Tablespoon
Chopped dates 1/4 Cup (4 tbs)



1. Prepare the kamado for indirect cooking at 450 F with a dripping pan.



2. Grind together fennel seeds, oregano and kosher salt together.

3. Spread it over the pork.

4. Take pine nuts, oregano and chopped onions in a mortar and pestle and grind everything together. Mix it with chopped dates in a separate bowl to make the stuffing.

5. Spoon out the stuffing in the center of the pork and roll it up. Tie and secure the log with butcher's string.

6. Place the log on the grill and cook it until the meat reaches an internal temperature of about 69 C.



7. Slice and serve. Enjoy!
