Cheddar cheese | 700 Gram | |
Milk | 300 Milliliter | |
Butter | 3 1/2 Tablespoon | |
Sodium citrate | 3 1/4 Teaspoon | |
Sodium hexametaphosphate | 1/8 Teaspoon ((optional)) |
MAKING:
1. Shred the cheese.
2. In a pot over medium heat, melt the butter into the milk.
3. Add the sodium citrate and sodium hexametaphosphate, stir to dissolve and bring to 150ºF.
4. Slowly mix in the shredded cheese and stir / whisk to a smooth constancy.
5. Transfer to molds* while still hot.
SERVING:
