I turned Kale into 5 make ahead dishes - Meal Prep

An excess of a super kale blend inspired these 5 quick make ahead meal prep ideas - perfect to help you through the week!

Ingredients

For lale and barley stir fry
Sliced onions 1/2 Cup (8 tbs)
Sausage 100 Gram
Barley 1 Cup (16 tbs) (presoaked cooked and drained)
Dark soy sauce 1 Tablespoon
Chilli garlic sauce 1 Tablespoon
Kale 4 Cup (64 tbs) (super Kale mix)
Chopped boiled egg 1 Cup (16 tbs)
For kole and kidney bean soup:
Water 4 Cup (64 tbs)
Chicken boullion cubes 10 1/2 Gram
Bay leaf 1
Ginger 2 Tablespoon , julienned
Salt To Taste
Pepper To Taste
Canned kidney beans 540 Gram , drained, rinsed (1 can of 19 fl oz)
Kale 2 Cup (32 tbs) (super Kale mix)
For kale hash browns:
Grated potatoes 4 Cup (64 tbs)
Kale 1 Cup (16 tbs) (super Kale mix)
Garlic powder 1 Teaspoon
Paprika 1 Teaspoon
Salt To Taste
Pepper To Taste
Flour 2 Tablespoon
Egg 1
For kale fried rice:
Chopped onion 1/2 Cup (8 tbs)
Cooked jasmine rice 4 Cup (64 tbs)
Light soy sauce 2 Tablespoon
Egg 1
Sriracha sauce 2 Tablespoon
Kale 2 Cup (32 tbs) (super Kale mix)
For chicken in black bean sauce with kale:
Sliced onions 1/2 Cup (8 tbs)
Chicken cubes 500 Gram (small cubes)
Black bean paste 2 Tablespoon
Oil 2 Teaspoon
Salt To Taste
Kecap manis 1 Tablespoon
Stock 1 Cup (16 tbs)
Kale 2 Cup (32 tbs) (super Kale mix)
Cornstarch slurry 2 Teaspoon

Directions

FOR KALE AND BARLEY STIR FRY:

MAKING:

1. Saute the onions and add the sausage and cook it.

2. Add the barley and spread it out.

3. Add the dark soya and chilli sauce and mix well and allow the barley to caramelize just a little.

4. Add in the super kale mix and the boiled egg.

FOR KALE AND KIDNEY BEAN SOUP:

MAKING:

1. Heat the water and add the bullion cube.

2. Add the bay leaf and ginger and bring to the boil.

3. Add salt and pepper to taste and add the kidney beans.

4. Add the super kale mix and cook only for a minute.

FOR KALE HASH BROWN:

MAKING:

1. Squeeze all the liquid out of the potatoes by squeezing through a cheesecloth.

2. All the other ingredients, mix well and divide.

3. Heat some oil in a pan, flatten each portion using oiled hands and fry on both sides till cooked.

FOR KALE FRIED RICE:

MAKING:

1. In a wok, saute the onions.

2. Add the rice and spread out.

3. Add the soya and crack in the egg on one side and scramble to cook.

4. Add the Sriracha sauce and super kale mix and mix well.

FOR CHICKEN IN BLACK BEAN SAUCE WITH KALE:

MAKING:

1. Saute the onions and add the chicken.

2. Add the bean paste and some of the oil.

3. Add salt and cook the chicken for a few minutes.

4. Add the kecap manis and the stock and allow to boil for a few minutes.

5. Add the super kale mix and a few tsps of the slurry to thicken the gravy.

SERVING:

6. Serve and enjoy!
