Easy Thai Red Curry Paste

When you make your own batch of Thai Red Curry paste the flavor and aroma is unmatched to any store bought product on the market. Make a batch and freeze it so you have it on hand to flavor a soup, curry or stir fry. The use of a mortar and pestle is traditional however Im using my food processor to save time.


Dried red chillies 20
Fish sauce 3 Teaspoon
Garlic 1/4 Cup (4 tbs)
Fish shrimp paste 1 Teaspoon
Shallots 3
White peppercorns 1 Teaspoon
Coriander roots 2 Tablespoon
Lemon grass stalks 1/4 Cup (4 tbs)
Shredded lime leaves 2 Tablespoon
Galangal 1/4 Cup (4 tbs)
Salt 1 Teaspoon



1. Soak the chillies in water overnight


2. In a food processor start with the liquid ingredients - fish sauce and lime juice and add the rest of the ingredients

3. Process adding some chilli water to grind it smooth


4. Use as required
