Today we're making homemade coconut mayo! This recipe is dairy-free, gluten-free, soy-free, and paleo-friendly.
Coconut oil | 1/2 Cup (8 tbs) | |
Extra virgin olive oil | 1/2 Cup (8 tbs) | |
Egg yolks | 2 | |
Dijon mustard | 1 Teaspoon | |
Lemon | 1/2 , juiced | |
Sea salt | 1 Pinch | |
Ground white pepper | To Taste |
MAKING:
1.First, measure out your melted coconut oil and olive oil, mix it, and set it aside.
2.Separate your eggs and add your yolks to the food processor.
3.Add the juice of half a lemon, a teaspoon of dijon mustard, and process it.
4.While it's processing, slowly add your oil mixture and you will see your mayo begin to emulsify.
5.If you pour it too quickly, it will not bind, or as they say in the culinary world, you'll break the yolk.
6.Once we have that, add your salt and white pepper to taste, and that's it.
