Fast And Easy Summer Pasta

Quick, simple and satisfying with a light and easy sauce, crispy garlic and herb infused oil, sweet baby tomatoes, wilted spinach and asiago kale chicken sausage. This is an all-in-one kind of meal that feeds many, travels well and can be served hot, cold or room temperature.

Ingredients

Pasta 1 Cup (16 tbs)
Olive oil 1 Tablespoon
Garlic 4 Clove (20 gm) , mince
Dried basil 1 Teaspoon (rubbed)
Dried red pepper flakes 1 Teaspoon (rubbed)
Chicken sausages 2 , slice
Grape tomatoes 1/2 Pint
Spinach 1 Large (handful)
Reserved pasta water 1/2 Cup (8 tbs)
Extra virgin olive oil 1 Tablespoon
Chopped flat leaf parsley 1/4 Teaspoon (garnish)
Salt To Taste
Pepper To Taste

Directions

MAKING:

1.In a pot, cook pasta in salted water to al dente. Mine took about 8-9 minutes.

2.In a pan, heat the olive oil with the garlic, basil and pepper flakes or medium. Move it around so it doesn't burn.

3.The sausage and tomatoes are ready to add when the garlic gets a bit golden and crispy and the oil becomes aromatic. Keep your eye on it so it doesn't burn {which can happen quickly}.

4.When the tomatoes begun to open up, turn off the heat and add in the spinach. Salt and pepper to taste.

5.Stir in the pasta.

6.Finish off with salt and pepper, the reserved pasta water, extra virgin olive oil and parsley.

7.Serve and enjoy!
