Roasted Shoulder Of Lamb With A Breadcrumb Crust

For lamb:
Lamb shoulder 1 (1 to 2kg)
Bay leaf 1
Onion 1 , chop
Garlic bulb 1 , cut in half
Thyme sprig 3
Rosemary sprig 1
Lemon 1 , slice
Olive oil 1 Tablespoon
Freshly ground black pepper To Taste
Flaked sea salt To Taste
For the crumb:
Red onion 1
Olive oil 1 Tablespoon
Butter 1 Tablespoon
Lemon zest 1 Teaspoon
Fresh thyme 1 Pinch
Anchovy fillets 4 , chopped finely
Fresh breadcrumbs 50 Gram
