This is basically the 3-2-1 method of cooking ribs. The only difference is I used butchers paper to wrap, instead of foil. This is more of a technique video than a recipe - use any rub or bbq sauce that you like.
Foil tends to steam the meat a bit more than I like - but that is just my personal preference.
