Cheese and Tomato Tarts

Readily available khari biscuits make a great base for these dainty, delectable tarts. With a nice topping of vegetables, tomato, cheese and oregano, they make ideal, non-messy finger foods. Just serve them and watch your kids enjoy it all by themselves.

Ingredients

For vegetable topping
Oil 1 Tablespoon
Finely chopped spring onion whites 1/4 Cup (4 tbs)
Finely chopped spring onion greens 1/4 Cup (4 tbs)
Finely chopped carrot 1/4 Cup (4 tbs)
Finely chopped cabbage 1/4 Cup (4 tbs)
Finely chopped capsicum 1/4 Cup (4 tbs)
Tomato ketchup 1 Tablespoon
Chili garlic sauce 1 Tablespoon
Salt To Taste
Other ingredients
Khari biscuits 16 Small (small thin round)
Thin tomato slices 16 Small
Olive oil 2 Teaspoon
Salt and ground black pepper To Taste
Grated mozzarella cheese 8 Tablespoon
Dried oregano 1 Teaspoon

Directions

GETTING READY

1. Preheat oven to 200 degree C or 400 degree F.

MAKING

For Vegetable Topping:

2. In a non--stick pan, heat oil, add spring onion whites, spring onion greens, carrot, cabbage and capsicum. Stir well and saute over medium flame for 2-3 minutes.

3. Add tomato ketchup, chili-garlic sauce and salt. Cook for 2 minutes and set aside.

For Tart:

4. Brush the tomato slices with a little olive oil and sprinkle salt and pepper over them.

5. On a non-greased baking tray, arrange the biscuits, and spread a portion of the vegetable mixture on each.

6. Place a tomato slice and sprinkle ½ tablespoon of cheese over each.

7. Pop in oven and bake for 10-12 minutes or until cheese melts. Remove from the oven and sprinkle a little oregano on top of each biscuit.

SERVING

8. Serve immediately.
