Herb Cheese and Roasted Capsicum Sandwich (Healthy Breakfast)

The Herb Cheese and Roasted Capsicum Sandwich gets it super flavor and aroma not just from the herb cheese but also the capsicum which is roasted to enhance the flavor. Red capsicum 1 Medium
Yellow capsicum 1 Medium
Green capsicum 1 Medium
Oil 3/4 Teaspoon (for brushing)
Salt To Taste
Mixed dried herbs 1 Teaspoon
Iceberg lettuce leaves 4 Large
Whole wheat bread slice 8
For herb cheese
Grated low fat paneer 3/4 Cup (12 tbs)
Low fat curd 1 Tablespoon
Finely chopped parsley 1 Tablespoon
Finely chopped dill 1 Tablespoon
Finely chopped garlic 1 Teaspoon
Finely chopped green chili 1 Teaspoon



1. Pierce the yellow capsicum with a fork, brush it using ¼ teaspoon oil and roast it over an open flame until the skin turns black from all the sides.

2. Cool, wash it in cold water and remove the skin, stem and seeds and discard them. Cut the capsicum into thin slices and set aside. Repeat the same with the green and yellow capsicum.

3. In a bowl, combine red, yellow and green capsicum slices, add salt and dried mixed herbs. Mix well, divide the capsicum mixture into 4 equal portions and set aside.

For Herb Cheese:

4. In blender, combine paneer, curd, parsley, dill, garlic, green chili, and salt. Blend until smooth. Divide into 4 equal portions.


5. Place a bread slice on a flat, dry surface and spread a portion of the herb cheese evenly over it.

6. Place a portion of the roasted capsicum mixture and a lettuce leaf over it and sandwich it using another bread slice. Repeat to make more.


7. Serve and enjoy!
