Using a variety of vegetables substantially increases the vitamin c, calcium and fibre content of these colourful uttapas, ideal for an evening snack.


Idli batter 1 1/4 Cup (20 tbs)
Finely chopped onions 1/4 Cup (4 tbs)
Grated cauliflower 1/4 Cup (4 tbs)
Grated carrot 1/4 Cup (4 tbs)
Finely shredded cabbage 1/4 Cup (4 tbs)
Finely chopped coriander 1/4 Cup (4 tbs)
Finely chopped capsicum 1/4 Cup (4 tbs)
Salt To Taste
Fruit salt 1/2 Teaspoon
Water 1 Tablespoon
Chili powder 1/2 Teaspoon
For greasing and cooking
Oil 1 Tablespoon



1. In a mixing bowl, take idli batter, add onion, cauliflower, cabbage, coriander leaves, capsicum, carrot, salt, fruit salt, water and mix.

2. Brush a mini uttapa pan with oil, pour in the prepared batter in each mold, sprinkle with chili powder and cook from both sides using little oil until crisp.


3. Serve hot with chutney.
