Chatpata Rajma Wrap

Go all out on this wonderful rajma recipe that retains all the taste without being calorie-dense! the spiciness of rajma is balanced by rolling up this wrap with a chunky curd dressing. A protein-packed wrap, this helps you stay strong and healthy!

Ingredients

For the rotis:
Whole wheat flour 1 Cup (16 tbs)
Water 1/2 Cup (8 tbs)
Salt 1 Pinch
Oil 1 Tablespoon
For rajma filling:
Oil 1 1/2 Tablespoon
Finely chopped ginger 1 Teaspoon
Finely chopped garlic 1 Teaspoon
Turmeric powder 1/2 Teaspoon
Chilli powder 2 Teaspoon
Coriander cumin powder 1 Tablespoon
Finely chopped onions 1/4 Cup (4 tbs)
Finely chopped tomatoes 1 1/2 Cup (24 tbs)
Water 2 Tablespoon
Tomato ketchup 1 Tablespoon
Soaked and boiled rajma 1 Cup (16 tbs) , lightly mashed
Chopped coriander 2 Tablespoon
Salt To Taste
For curd dressing:
Curd 1/2 Cup (8 tbs) , whisked
Grated cucumber 1/2 Cup (8 tbs)
Grated carrot 1/2 Cup (8 tbs)
Other ingredients:
Chili garlic chutney 2 Teaspoon
Finely chopped spring onion greens 4 Tablespoon
For rolling
Whole wheat flour 1 Tablespoon (For dusting as needed)

Directions

MAKING

For the rotis:

1. In a mixing bowl, combine together wheat flour, salt, oil and water, form into a dough using water.

2. Divide the dough into 4 equal portions. Using little flour roll each portion into 8 inch circles. On a heated griddle lightly cook the rotis from both sides.

For stuffing:

3. In a pan, heat oil, add ginger and garlic, saute for few seconds. Add turmeric powder, chili powder, coriander cumin powder, onion, tomato and water, cook until tomatoes are soft.

4. Add tomato ketchup and rajma, mix and saute for 1 to 2 minutes, add coriander leaves and salt, mix well and saute for another 1 minute.

For curd dressing:

5. In a mixing bowl, take curd, add cucumber, carrot and salt, mix well.

FINALIZING

6. Warm a roti and place on a clean dry surface. Lightly apply chili garlic chutney, place 1/4 of the rajma filling, spoon 1/4th of the curd dressing, sprinkle some spring onion greens .Roll and secure with a toothpick. Repeat to make 3 more wraps.

SERVING

7. Serve with your choice of beverage.
