Green Pea and Cucumber Sandwich

A triple-decker feast prepared with buttered bread roundels packed with a green peas mixture and refreshing cucumber slices. You will love the blend of crunchy cucumber and nutty green peas laced with mayonnaise and chili sauce as you bite into the sumptuous Green Peas and Cucumber Sandwich.


For green pea stuffing
Oil 2 Teaspoon
Coarsely crushed green peas 1 Cup (16 tbs)
Soda bi carb 1 Pinch
Salt To Taste
Mayonnaise 2 Tablespoon
Chili sauce 1 Tablespoon (or ketchup if for kids)
Other ingredients
Fresh bread slices 12
Butter 1 Tablespoon (for brushing)
Green chutney 6 Teaspoon
Cucumber slices 12



For Green Pea Stuffing:

1. In a broad non-stick pan, heat oil, add green peas, soda bi-carb and salt. Stir occasionally and cook over medium flame for 2 minutes. Into a bowl, transfer the mixture and let cool slightly.

2. Add mayonnaise and chili sauce and mix well. Divide the stuffing into 4 equal portions and set aside.

3. Cut the bread slices into 2½- inch rounds with the help of a cookie cutter.

4. Place 3 bread roundels on a flat, dry surface, apply a little butter and ½ tsp green chutney over them.

5. Spread 1 portion of the green pea stuffing over 1 bread roundel and sandwich with another bread roundel with the buttered-chutney side facing upwards. Place 3 cucumber slices and sprinkle salt to taste. Cover with the 3rd bread roundel with the buttered-chutney side facing downwards. Repeat the step to make more.


6. Serve immediately.
