Dabeli, a spicy potato mixture combined with onions, garlic chutney, meetha chutney, spiced masala peanuts and fruits like pomegranates and grapes... how can the equation go wrong! serve plain or smeared with butter and grilled on a tava! since dabeli masala is easily available in provision stores, you can easily recreate the roadside experience

Ingredients

For stuffing
Dabeli masala 1 1/2 Tablespoon
Sweet chutney 2 Tablespoon
Water 3 Tablespoon , divided
Oil 1 Tablespoon
Boiled peeled mashed potatoes 1 1/4 Cup (20 tbs)
Salt To Taste
Finely chopped coriander 2 Tablespoon
Grated coconut 2 Tablespoon
Pomegranate 2 Tablespoon
Other ingredients
Laddi pav 4
Garlic chutney 4 Teaspoon
Finely chopped onions 4 Teaspoon
Masala peanuts 4 Teaspoon
Nylon sev 4 Teaspoon
Butter 2 Tablespoon
For garnish
Nylon sev 2 Teaspoon

Directions

MAKING

1. In a small bowl, mix together, dabeli masala, sweet chutney and water (1 tablespoon). In a pan heat oil, add in the prepared mixture and cook for 1 minute stirring constantly.

2. Add potato and salt, mix well. Add water (2 tablespoon), mix again. Transfer to a plate and allow to cool. Press with bck of a spoon to level.

3. Sprinkle with coriander, coconut and pomegranate. Slit a pav, on the lower inner surface apply garlic chutney, sweet chutney, stuff with 2 tablespoon of the prepared filling, press to level.

4. Sprinkle onion and peanuts, apply garlic and sweet chutney on the upper inner part on the pav, sprinkle with nylon sev and close the pav.

5. On a heated griddle, cook the dabeli from both sides using butter.

SERVING

6. Dredge the sides in nylon sev and serve.
