These Green Peas Pancakes are quite an interesting alternative to the traditional south Indian uttapa, which is commonly had for breakfast. This tasty snack has a high folic acid and fibre content, making it very nutritious. Plus, it is also easy to make without the need for any fermentation. Always keep some fruit salt handy for such quick-fix delights.

Boiled green peas 3/4 Cup (12 tbs) , ground
Rice flour 1/2 Cup (8 tbs)
Bengal gram flour 1/2 Cup (8 tbs)
Turmeric powder 1/4 Teaspoon
Finely chopped green chillies 2 Tablespoon
Salt To Taste
Fruit salt 1/2 Teaspoon
Oil 2 Teaspoon (greasing and cooking)
Low fat cottage cheese
Grated carrot 1/4 Cup (4 tbs)
Finely chopped tomatoes 1/2 Cup (8 tbs)
Water 1 Cup (16 tbs) (as needed)

1. In a mixing bowl, place the ground green peas, add rice flour, gram flour, turmeric powder, green chili and salt, add enough water to get a batter consistency, mix well. Add fruit salt and gently stir to mix.

2. Brush a heated griddle with oil, drop 2 spoonfuls of the batter, sprinkle with cottage cheese, carrot and tomato, flip and allow to cook. Repeat to make several pancakes.

3. Serve hot with green chutney.
