Quick Rava Idlis

Well, you love idlis, but what if you have no batter on hand? here is a quick and equally tasty (in fact, spicier!) version of idlis made with semolina. Since the batter requires no fermentation, this recipe is a quick-fix!

Ingredients

For batter :
Semolina 1 Cup (16 tbs)
Curds 1/4 Cup (4 tbs)
Salt To Taste
Water 1 Cup (16 tbs)
Fruit salt 3/4 Teaspoon
Other ingredients:
Oil 1 Teaspoon
Ghee 1/2 Teaspoon
Mustard seeds 1/2 Teaspoon
Split black lentil 1 Teaspoon
Broken cashewnut pieces 1 Tablespoon
Curry leaves 4
Cumin seeds 1/2 Teaspoon
Chopped green chillies 2 Teaspoon
Asafoetida 1 Pinch
Water 2 Tablespoon
For greasing:
Oil 1/2 Teaspoon (For greasing)

Directions

GETTING READY

1. Grease an idli mould with oil.

MAKING

2. In a mixing bowl, place semolina, add curd, salt and water, mix well and allow to sit for 10 minutes.

3. In a small non stick pan, heat oil and ghee, add mustard seeds, urad dal,cashewnuts, curry leaves, cumin seeds, green chilies and asafoetida, saute for about 2 minutes.

4. Add fruit salt and water, stir to mix. In the greased idly mold pour in the batter and steam for 7 to 8 minutes. Allow to slightly cool, demold.

SERVING

5. Serve with sambhar and chutney.
