Semolina Pancakes

Semolina pancakes are very easy, quick and colorful. . . Great to serve for breakfast or snacks with a chutney of your choice. . .

Ingredients

Semolina 1 1/2 Cup (24 tbs)
Curds 3/4 Cup (12 tbs)
Finely chopped cabbage 1/2 Cup (8 tbs)
Grated carrot 1/2 Cup (8 tbs)
Finely chopped coriander 1/4 Cup (4 tbs)
Finely chopped green chili 1 Tablespoon
Salt To Taste
Fruit salt 2 Teaspoon
Oil 5 Teaspoon
Water 1 1/4 Cup (20 tbs)

Directions

GETTING READY

1. In a mixing bowl, combine semolina, curd and water (1 cup or as required), allow to soak for 30 minutes.

MAKING

2. To the soaked mixture, add cabbage, carrot, coriander, green chili and salt, mix well. Add fruit salt and water( 2 tablespoon), mix again. Add oil (2 teaspoon) and stir to mix.

3. Grease a non-stick mini uttapam pan with oil 1/2 teaspoon, pour approximately 1½ tbsp of batter in each mold and spread lightly. Cook using little oil, until crisp and golden brown.

SERVING

4. Serve with coconut chutney.
