Cucumber Soya Pancake (Healthy Breakfast)

Juicy cucumber with semolina and nutty soya flour, bring them all together and you have a fantastic pancake that is sure to make your day! These sumptuous Cucumber Soya Pancakes are simply flavored with green chilies and coriander. Cucumber also possesses antioxidants and anti-inflammatory properties, adding to the goodness of this pancake. Serve hot with nutritious green chutney for a punchy combination.

Ingredients

Grated cucumber 1 Cup (16 tbs) (thickly grated)
Soya flour 1/2 Cup (8 tbs)
Semolina 1/2 Cup (8 tbs)
Finely chopped green chili 2 Teaspoon
Finely chopped coriander 1/2 Cup (8 tbs)
Low fat curd 2 Tablespoon
Salt To Taste
Oil 2 1/4 Teaspoon (for greasing and cooking)
Water 1 Cup (16 tbs)

Directions

MAKING

1. In a bowl, combine grated cucumber, soya flour, semolina, green chili, coriander, curd, salt and 1 cup water. Mix well to make a batter of pouring consistency.

2. Heat a griddle and grease it lightly using teaspoon of oil.

3. Pour a ladleful of the batter on it and spread in a circular motion to make 5- inch diameter pancake. Cook the pancake using teaspoon of oil until golden brown on both sides. Repeat to make more.

SERVING

4. Serve hot with nutritious green chutney.
