The aloo frankie truly needs no introduction! This one is an authentic recipe that simply never fails you. With a balance of flavors ranging from tangy to spicy it will be enjoyed by young and old alike.


For stuffing
Butter 1 1/2 Tablespoon
Ginger garlic paste 1 Teaspoon
Boiled mashed potatoes 1 3/4 Cup (28 tbs)
Chili powder 3/4 Teaspoon (or to taste)
Garam masala 1 Teaspoon
Chaat masala 1/2 Teaspoon
Finely chopped coriander 1 Tablespoon
Salt To Taste
For onion masala mixture
Finely chopped onion 1/2 Cup (8 tbs)
Dried mango powder 1/2 Teaspoon
For masala water
Water 3 Tablespoon
Chili powder 1/2 Teaspoon (or to taste)
Dried mango powder 1 Teaspoon
Garam masala 1/4 Teaspoon
For green chili in vinegar
Vinegar 1 Tablespoon
Finely chopped green chili 1 Teaspoon
Other ingredients
Roti 4



For Stuffing:

1. In a non-stick pan, heat butter, add the ginger-garlic paste and sauté over medium flame for 30 seconds.

2. Add potato, chili powder, garam masala, chaat masala, coriander and salt. Mix well and cook for 1-2 minutes. Set aside.

For Onion Masala Mixture:

3. In a bowl, mix onion, chili powder, mango powder, and salt. Set aside.

For Masala Water:

4. In a small bowl, combine water, chili powder, mango powder, garam masala, and salt. Mix well.

For Green Chili in Vinegar:

5. In a bowl, mix vinegar and finely chopped green chili. Set aside.


6. On a clean dry surface, place a roti, and spread ¼th of the potato stuffing in a single row in the centre.

7. Drizzle ¼th of the masala water and 1 tsp of chili in the vinegar evenly over it.

8. Sprinkle ¼th of the onion masala mixture on it and roll it up tightly. Repeat the steps to make more.


9. Wrap a tissue paper around each Frankie and serve immediately.


You can roast in pan if desired before serving.
