A delicious vegetarian version of kofta curry prepared with pumpkin.

Dry mango powder | 1 Teaspoon | |
Red chili powder | 1/4 Teaspoon | |
Vegetable oil | 300 Milliliter (For deep frying) | |

For the garvy | ||
Ginger garlic paste | 1 Teaspoon | |
Turmeric powder | 1/2 Teaspoon | |
Water | 300 Milliliter | |
Vegetable oil | 4 Teaspoon | |
Red chili powder | 1/2 Teaspoon | |
Cumin seeds | 1 Teaspoon | |
Onion | 2 Small , pureed | |
Tomato | 2 Small , pureed |
GETTING READY
1. Rinse peel and grate the white pumpkin.
MAKING
For Koftas:
2. In a bowl, mix grated pumpkin with chickpea flour, dry mango powder, red chili powder, and salt. Roll the mixture into small balls.
3. In a pan, heat oil and deep fry the balls until golden brown. Transfer to a paper towel and set aside.
For Gravy:
4. In another pan, heat oil, add cumin seeds and allow them to splutter.
5. Add onion puree and fry until golden brown.
6. Stir in tomato puree and ginger garlic paste. Cook for a few minutes.
7. Add red chili powder, turmeric powder, and salt. Mix well.
8. Pour water and bring to a boil. Now, put the fried koftas and let cook for another 5 minutes.
SERVING
9. Serve hot!
