Masala Dosa by Tarla Dalal

A tried-and-tested recipe that serves as a wholesome answer to the hungry palate! A thin crisp dosa, engulfed in a spicy potato bhaji.

Ingredients

For the masala
Boiled potato chunks 1 1/4 Cup (20 tbs) , peeled
Oil 1 Tablespoon
Mustard seeds 1/2 Teaspoon (rai/sarson)
Split black lentil 1/2 Teaspoon (split urad dal)
Finely chopped green chillies 1 Teaspoon
Curry leaves 7 (kadi patta)
Thinly sliced onions 1/2 Cup (8 tbs)
Salt To Taste
Turmeric powder 1/4 Teaspoon (haldi)
Lemon juice 1 Teaspoon
Sugar 1 Pinch
Finely chopped coriander 1 Tablespoon (dhania)
Other ingredients
Dosa batter 1 1/2 Cup (24 tbs) (readymade)
Butter 9 Teaspoon (For greasing and cooking)

Directions

GETTING READY

FOR THE MASALA

1. In a kadai/wok, heat oil, and splutter mustard seeds. Now add urad dal, and sauté for half a minute.

2. Add green chilies onions, and curry leaves and sauté for 2 - 3 minutes. Now mix in potatoes, turmeric powder, salt, lemon juice, and sugar, and cook for a couple of minutes. Add coriander and cook for a minute. Allow to cool.

3. Once cooled, mash gently with a spoon and keep aside.

FOR THE BATTER

4. In a bowl, combine together dosa batter, salt, and little water (if the batter appears to be too thick) and keep aside.

MAKING

5. Grease a hot non-stick griddle (tava) with ¼ teaspoon of butter and sprinkle little amount of water on it (it should sizzle right away). Wipe the griddle instantly with a wet cloth piece.

6. Now pour one-fourth of the batter on the griddle and spread it in a circular motion to make a 7 inch thin dosa. Smear 2 teaspoons of butter on the edges of the dosa.

7. Spread one-fourth of the prepared masala in an even manner over the dosa and cook until dosa turns golden brown.

8. Fold over the dosa with a spatula while pressing it lightly to make a flat roll.

Repeat the above process to make three more dosas.

SERVING

9. Serve the dosas hot with coconut chutney.
