Paneer Fritters by Tarla Dalal

Paneer fritters are a unique preparation of chilli garlic flavored paneer coated with crushed papad and deep-fried to perfect golden brown. The innovative use of papad instead of bread crumbs makes it all the more crisp and flavorful. It is a wonderful accompaniment to tea or juice and will be loved by all.

Ingredients

Crumbled paneer 1 Cup (16 tbs) (paneer)
Salt To Taste
Grated garlic 1 Tablespoon (lehsun)
Chilli powder 1 Teaspoon
Tomato ketchup 2 Teaspoon
Plain flour 1/3 Cup (5.33 tbs) (maida)
Papad 3/4 Cup (12 tbs) , crushed
Oil 1/2 Liter (For deep frying)
Water 1/2 Cup (8 tbs)

Directions

GETTING READY

1. In a plate, knead the paneer properly, and mix in salt, garlic, chili powder and tomato ketchup.

2. Divide the paneer mix into nine equal parts and roll each part into 2 inch long cylindrical shape.

3. In a bowl, combine together plain flour with half cup water.

MAKING

4. Dip each roll into flour-water paste and roll in the crushed papad.

5. Heat oil in kadai/wok and deep-fry till golden brown from all sides. Drain on paper towel.

SERVING

6. Serve the fritters hot with tomato ketchup.
