A famous Mumbai roadside snack - samosa, which tastes best when served hot

Ingredients

For the dough
Plain flour 1/3 Cup (5.33 tbs) ((maida))
Melted clarified butter 1/2 Teaspoon ((ghee))
Carom seeds 1 Pinch ((ajwain))
Salt To Taste
Water 1/2 Cup (8 tbs)
For the stuffing
Boiled potato chunks 3/4 Cup (12 tbs) , peeled
Boiled green peas 1/3 Cup (5.33 tbs)
Oil 1 Tablespoon
Cumin seeds 1/2 Teaspoon ((jeera))
Asafoetida 1 Pinch ((hing))
Ginger green chilli paste
Garam masala 1/2 Teaspoon
Dried mango powder 1/4 Teaspoon ((amchur))
Whole coriander seeds 1/4 Teaspoon ((dhania))
Finely chopped coriander 1 Tablespoon ((dhania))
Other ingredients
Oil 1/2 Liter ((For deep frying))

Directions

GETTING READY

FOR THE DOUGH

1.In a bowl, combine together all the dough ingredients, along with enough water and knead to form firm dough. Cover the dough with a wet muslin cloth or a dish. Keep aside for 10 - 15 minutes.

FOR THE STUFFING

2.In a non-stick pan, heat oil and splutter cumin seeds. To this, add asafoetida and ginger-green chilli paste. Sauté for a few seconds, and add potatoes and green peas. Cook for a couple of minutes and mash lightly using a spoon.

3.Now mix in dry mango powder, garam masala, coriander seeds, and salt, and cook for two minutes, while stirring continuously. Now add coriander, and cook for a minute. Turn off stove.

4.Divide the stuffing into four equal parts and keep aside.

MAKING

5.Now take the dough and knead it well until smooth and elastic. Divide it into two equal parts.

6.Take a dough portion and roll it out into 6" x 3" diameter oval. Use a knife, and cut the rolled out dough horizontally into two equal parts. Take one part and join the edges to make a cone.

7.Now fill the dough cone with a portion of the stuffing and seal the edges using little water.

8.Repeat the above process to make three more samosas.

9.Heat oil in the deep frying pan/kadai, and deep fry until golden brown on both sides. Drain on paper towel.

SERVING

10.Serve the samosas hot with green chutney.
