Ringan or Baingan(eggplant or brinjal) Palita is basically spicy shallow fried eggplants. Brinjal slices cooked with Indian spice mixture. If you are not a fan of Eggplant, use Zucchini or other similar vegetables. This baked eggplant can be then used in Burger Sandwiches as well or serve as a side or snack at any time.

MAKING
1. In a bowl, combine besan, turmeric powder, red chili powder, coriander cumin powder, sugar, and salt. Mix well.
2. Coat the eggplant slices with the mixture.
3. In a pan, heat oil and cook eggplant slices, covered for about 2 minutes per side.
SERVING
4. Garnish with coriander and coconut. Serve on bun and enjoy!
TIPS
You can use zucchini instead of eggplant if desired.
