Oats Palak and Sprouts Mini Uttapa (Multi-Nutrient for Pregnancy) by Tarla Dalal

Pregnancy is a time to be enjoyed. It's a golden period when you feel quite indulgent, and yet have to strike a balance between your sudden hunger pangs, changing tastes and good health. Here is a quick snack for such times! The Oats Palak Sprouts Mini Uttapa is not just toothsome but also rich in nutrients -- you get iron, folic acid and vitamin A from the spinach, fibre and protein from the sprouts and oats. Tons of good health for the little life inside you!

Ingredients

Coarsely powdered quick cooking rolled oats 1 Cup (16 tbs)
Coarsely powdered urad dal 1/4 Cup (4 tbs) (split black lentil)
Green chili paste 2 Teaspoon
Salt To Taste
Spinach puree 1/2 Cup (8 tbs)
Water 1 1/2 Cup (24 tbs)
Finely chopped onion 6 Tablespoon
Boiled mixed sprouts 3/4 Cup (12 tbs) (moong, matki, chana etc)
Oil 3 1/4 Teaspoon (For greasing and cooking)
Chaat masala To Taste

Directions

GETTING READY

1. In a bowl, combine oats, urad dal, green chili paste, salt, spinach purée and 1½ cups of water. Mix until no lumps remain, cover the bowl and set aside for 15 minutes.

MAKING

2. Heat a mini uttapa pan and grease it lightly using ¼ teaspoon of oil.

3. Pour a spoonful of the batter in each uttapa mould to make a 3-inch diameter round.

4. Top all the uttapas with 2 tablespoons of onions and ¼ cup of mixed sprouts. Cook them, using 1 teaspoon of oil, till they turn golden brown from both the sides.

5. Remove from the pan and sprinkle a little chaat masala over each. Repeat to make more.

SERVING

6. Serve hot with coconut chutney and sambhar.

TIPS

1 cup of quick cooking rolled oats gives 1 cup of coarsely powdered oats.

2½cups of chopped spinach when blanched and blended gives ½ cup of spinach purée.
