Chilli Paneer Stir-fry by Tarla Dalal

This versatile dish with paneer and green chillies can be served as a starter or as an accompaniment to the main meal.

Ingredients

Cottage cheese cubes 2 Cup (32 tbs) (fresh paneer)
Plain flour 2 Tablespoon
Cornflour 4 Tablespoon
Salt To Taste
Oil 2 Tablespoon
Green chillies 2 , cut into strips lengthwise
Grated ginger 1 Tablespoon
Finely chopped garlic 1 Tablespoon (lehsum)
Spring onion whites 1/2 Cup (8 tbs) , thinly sliced
Soy sauce 1 Teaspoon
Chilli sauce 1 Tablespoon
Vinegar 5 Drop
Water 1/2 Cup (8 tbs)
For the garnish
Spring onion greens 1/4 Cup (4 tbs) , finely chopped
Spring onion greens 1/4 Cup (4 tbs) (finely chopped)

Directions

GETTING READY

1. In a bowl, combine together plain flour, corn flour, salt, and half cup of water and mix properly. Now mix in paneer cubes in a gentle way.

2. Add oil in the deep frying pan, and when hot deep fry a few paneer pieces at a time until very light brown. Keep aside.

MAKING

3. In a broad non-stick pan, add oil and when hot add green chillies and sauté for half a minute. Add ginger and garlic, mix well and sauté for a few seconds.

4. Now add spring onion whites, sauté for a minute, and add salt, followed by fried paneer cubes, soya sauce, chili sauce, and vinegar. Cook for a minute or two and turn off flame.

SERVNG

5. Serve the dish hot after garnishing with spring onion greens.
