This recipe proves that you can make healthier versions of almost any dish by throwing in a few thoughtful ingredients -- like oats in this case. Using oats and methi to make the popular Gujarati snack makes it a wonder dish for diabetics. Since both oats and methi are rich in fibre, they help control blood sugar levels. Steaming ensures minimal use of oil making this a great option for weight-watchers too. The Oats Methi Muthia is also a winner in the flavor and aroma categories, and will go on to top the charts if you serve with green chutney for added zing!


Coarsely powdered quick cooking rolled oats 3/4 Cup (12 tbs)
Chopped fenugreek leaves 2 Cup (32 tbs) , finely chopped
Semolina 2 Tablespoon
Low fat curd 3 Tablespoon
Chili powder 1 1/2 Teaspoon
Coriander cumin powder 2 Teaspoon
Turmeric powder 1/4 Teaspoon
Green chili paste 1 Teaspoon
Asafoetida 1 Pinch
Salt To Taste
For tempering
Oil 1 Teaspoon
Mustard seeds 1/2 Teaspoon
Sesame seeds 1/2 Teaspoon



1. In a bowl, combine oats, fenugreek leaves, semolina, curd, chili powder, coriander-cumin seeds powder, turmeric powder, green chili paste, asafoetida and salt. Mix well and knead into soft dough using little water.

2. Divide the dough into 2 equal portions and shape each portion into a cylindrical roll of approximately 6-inch in length and 1-inch in diameter.

3. On a sieve, arrange the rolls and steam in a steamer over high flame for 10 minutes. Remove and set aside to cool slightly for 10 minutes.

4. Cut the rolls into ½- inch slices and set aside.

For Tempering:

5. In a small non-stick pan, heat oil, add the mustard seeds and allow them to splutter.

6. Add sesame seeds and cook over medium flame for 30 seconds.


7. Pour the tempering over the muthia pieces and toss it lightly.


8. Serve hot with green chutney.
