Kadai Paneer

Kadai Paneer, is a paneer tossed in red gravy and cooked in Indian spices.


For basic gravy
Coriander seeds 1 Tablespoon
Dry red kashmiri chilies 10
Oil 2 1/2 Tablespoon
Garlic 2 Tablespoon , finely chopped
Green chili 1 Tablespoon , finely chopped
Tomato 2 1/2 Cup (40 tbs) , finely chopped
Tomato puree 1/4 Cup (4 tbs)
Dried fenugreek leaves 1 Teaspoon
Garam masala 1 Teaspoon
Salt To Taste
Water 2 Tablespoon
For paneer
Paneer 1 1/2 Cup (24 tbs) , cubed
Oil 2 Cup (32 tbs) (For deep frying)
Warm water 3 Cup (48 tbs)
For karahi paneer
Oil 1 Tablespoon
Onion 1/2 Cup (8 tbs) , finely chopped
Coriander cumin powder 1 Teaspoon
Chili powder 1 Teaspoon
Turmeric powder 1/4 Teaspoon
Garam masala 1/2 Teaspoon
Kasuri methi 1/4 Teaspoon
Water 1 Cup (16 tbs)
Fresh cream/Cornflour dissolved in milk 1/2 Cup (8 tbs)
Capsicum 1/2 Cup (8 tbs) , sliced



1. In a frying pan, add dried red chilies and coriander seeds, dry roast for few seconds, allow to cool and grind to a powder.

2. In another pan, heat oil, add garlic and saute over medium flame for few seconds. Add in the prepared powder and green chilies, cook for few seconds.

3. Add in the tomatoes, cook for about 10 minutes or until the tomatoes are done. Mash with a potato masher. Add tomato puree and water. Season with salt, crushed kasuri methi and garam masala.

4. In a wok, heat oil and lightly fry the paneer cubes. Dump into warm water and allow to soak for about 10 minutes, drain.

5. In another wok, heat oil, add onion and fry until translucent, add in the prepared gravy. Add coriander cumin powder, chili powder, turmeric powder, garam masala and kasuri methi, pour in water and allow to boil for few minutes.

6. Add capsicum, season with salt, mix and allow to cook until capsicum is done. Add in the fried paneer and fresh cream, toss to mix.


7. Garnish with coriander and serve hot with parathas.
