Vada Pav ( Mumbai Vada Pav)

Aptly called the poor man's burger! deep-fried potato patties served between laddi pav smeared with an assortment of chutneys, this serves as a meal at a meagre price of just rs 5 to rs 10. Serve with fried green chillies if you like stuff a tad spicier, and perk it up further by adding finely chopped onions along with the chutneys.


Oil 1 Tablespoon
Mustard seeds 1/2 Teaspoon
Asafoetida 1/4 Teaspoon
Curry leaves 7 , broken
Ginger 1/2 Tablespoon , finely chopped
Garlic 1/2 Tablespoon , finely chopped
Green chili 1/2 Tablespoon , finely chopped
Boiled potato 1 1/2 Cup (24 tbs) , peeled and mashed
Turmeric powder 1 Pinch
Salt To Taste
Oil 2 Cup (32 tbs) (For deep frying)
For batter
Gram flour 3/4 Cup (12 tbs)
Water 1/4 Cup (4 tbs)



1. In a wok, heat oil, add mustard seeds, allow to crackle. Add the asafoetida and curry leaves and sauté over medium flame for a few seconds.

2. Add ginger, green chili and garlic and sauté on a medium flame for a few more seconds. Add in the potatoes, salt and turmeric powder, mix well and cook for about a minute, stirring continuously.

3. Add coriander, mix well. Set aside and allow to cool. Divide the mixture into 4 equal portions and shape each portion into balls.

4. In a mixing bowl, mix together, the ingredients of the batter.

5. In a wok, heat oil, dip the vadas in the prepared batter, and deep fry until golden brown.


6. Place the vadas inside pav along with garlic, meethi or green chutney and serve with fried green chili.
