Spinach and Paneer Parathas by Tarla Dalal

With the refreshing green hue of spinach, these paneer and spinach parathas look and taste good! While spinach adds its goodness to the dough, a successful duo of cauliflower and paneer perked up with coriander, green chilies and ginger work their magic in the filling!

Ingredients

For the dough
Chopped spinach 1 1/2 Cup (24 tbs)
Lemon juice 1/2 Teaspoon
Plain flour 1 Cup (16 tbs)
Whole wheat flour 1 Cup (16 tbs)
Salt To Taste
Clarified butter 1 Tablespoon
Water 1 1/2 Cup (24 tbs) (little more or less to attain the right consistency of the dough)
For stuffing
Grated cauliflower 3/4 Cup (12 tbs)
Crumbled paneer 3/4 Cup (12 tbs)
Finely chopped coriander 2 Tablespoon
Finely chopped green chilies 1 Tablespoon
Other ingredients
Whole wheat flour 4 Tablespoon , for rolling (gehun ka atta)
Oil 5 Teaspoon

Directions

GETTING READY

FOR THE STUFFING

1. Combine together all the stuffing ingredients in a bowl.

FOR THE DOUGH

1. In the mixer, combine together spinach, lemon juice and 1 tablespoon of water and blend in the form of a smooth puree.

2. In a bowl, knead a semi soft dough by combining together wheat flour, plain flour, salt, clarified butter, and prepared spinach purée using enough water. Keep aside, in covered state, for 10 - 15 minutes.

MAKING

3. Make six equal parts of the dough, and roll out one portion of it into 5 inch diameter circle using little amount of whole wheat flour.

4. Now take one portion of the stuffing and place it on half of the circle. Fold it over to create a semi-circle.

5. On hot, non-stick griddle (tava) place the paratha and cook on both sides using little oil.

6. Repeat the above steps to prepare 5 more parathas.

SERVING

7. Serve the parathas hot with yogurt and pickle.
